I having long enjoyed the distinction of my mothers cooking.
Like an hostess she can use the simplest of ingredients
at hand and serve up an elaborate formal meal fit for a Queen.
And mothers do it day in and day out.
God bless you mum.

No sir I replied my mother is a very good cook.

Anthony Fry's Carrot Cake.
9" Tin Carrot Cake

6oz apricots
8oz butter
8oz brown sugar
4 eggs separated
10oz plain flour
1 teasp baking powder
1/2 tsp bicarb soda
10oz fresh carrots 8oz when peeled and blend in machine with 1 oz fresh ginger
4oz sultanas
1 grated lemon rind
1 grated lime rind
1 tsp ground cinnamon
1 tsp sweet mixed spice
1 tble sp golden syrup
1 tbl sp maderia honey
touch of almond essence
Decorate with julienne of apricots from pkt

1. 1/2 pkt apricots puree until smooth in machine with favorite Jam till spreadable.

2. Greaseproof paper in a 9" round spring mould tin or cake tin

3. Beat the butter and sugar together until pale and creamy in machine

4, Whisk the egg yolks and beat into the butter and sugar

5. Sieve the flour and baking powder and fold into the mixture

6. Add the rest of the ingredients except the egg whites

7. Whisk the egg whites until they form stiff peaks in machine and fold into the mixture

8. Place the mixture in the greased tin and cook at 220 electric num 6 gas for 50 / 55 minutes

9. Cool in the tin for 10 minutes and then turn onto a wire rack

10. When completely cooled, slice in half and spoon the pureed apricot/jam mixture onto the bottom half
Place the other half on top

Tub of mascoponi Cream Cheese
6 oz icing sugar
touch of Almond Essence to taste.
juice of half lemon & Lime squeezed
Mix together until smooth, top cake with same.
Decorate with julienne of apricot.



Mothers Yorkshire Pudding Mix For One:
For Toad In The Hole Also.
One Egg.
1 Egg Cup Milk.
1 Egg Cup Water.
Pinch Salt.
S/R Flour:
3 Egg Cups Whisk It Well.
4 Chipolatas or 2 Sausages,
Cook Sausages / Chipolatas,
Just Before Going In Oven.
"English Dripping" in roasting dish.
Heat Oven To 200c Electric, Or 6 on Gas.
Put Dish With Dripping In Till Very Hot.
Take Out Pour Batter In, Place Sausages In,
Put Back In Oven Till Cooked,
Approx 30 Minutes.
With Gravy.
Enjoy.

Roast Potatoes With A Natural Aphrodisiac In Them.
Remember To Leave The Rest Of The Day Free.
Really Turn Your Partner On.
Roast Nooky Potatoes.
Recipe:
Potatoes Peeled Cut To 5/6 Per Portion
Oil As For Roast Potatoes.
Fresh Parsley Good 1/2 Hand full When Chopped
Fresh Coriander Good 1/2 Hand full When Chopped.
Potatoes Rolled All Over In Medium / Hot Curry Powder.
Salt And Black Pepper.
Paprika Shaken Over Potatoes When Ready For Oven.
Roast In An Oven 250c/300c About 40/45 Minutes.

PS: You Can Add Carrots Or Parsnips To Same Tray.

My Mothers. Bread Pudding.
Recipe By: Phoebe Dickinson.
Famous Bread Pudding.

One loaf soaked for Half an hour then
squeezed out as dry as possible.
5 tbl spoons of self raising flour.
Half/lb or500gr butter or margarine.
2 tbl spoons of granulated sugar.
2 tbl spoons of demara sugar.
mix this combination all together first.

Half lb or 500 grms currants.
Half lb or 500 grms mixed fruit.
juice from one orange.
1 grated apple.
2 Oz's mixed spice.

Then add all these ingredients together to a smooth creamy texture, if to dry add some milk to make creamy.
Put in greased tray in hot oven on mark 6 or 200 electric, turn the tray after Half hr should be ready in about One hr for test like cake put knife in to test dry blade, when ready take out sprinkle with sugar serve it hot, it's excellent with custard or cream, even cold it is still excellent.
You will have friends for life once they taste Mums marvelous bread pudding.

Try My Grandmother Hardy's.
Roast Goose And Sweet Potato Baked Apples.

1 goose approx 8/9lb,
2 cups breadcrumbs,
1 chopped onion,
2 tablespoons of oil,
3 lg sweet potatoes,
1/4 teaspoonful sage,
1 teaspoonful salt,
pinch of pepper,
6/8 apples,
1/4 cup brown sugar.

Cook the goose liver till tender, chop and add to the stuffing.
This is made by mixing the breadcrumbs, the oil, sage, pepper, salt, onions together.
Give the goose a wash.
Stuff it sew up top and bottom.
Then roast it slowly on 200/250 Fahrenheit degrees for about 3 hrs.
Wash and core 6/8 apples.
Mash the cooked sweet potatoes after cooking, and stuff the apples sprinkle with sugar.
Bake the apples until they are tender but firm.
Serve them straight out of the oven with your goose nice selection of baked parsnips, Brussels sprouts, new potatoes etc!.

PS; don't forget the gravy mum enjoy your meal.

Just A Starter Dish For Him / Her.
Grandee Lady Eggs.

Boil 4/6 eggs 10 minutes take off.
Peel the shell off cut in half longways.
Place in shallow dish.
Make a thinnish mornay sauce.
Cover eggs with the sauce add his/hers favourite cheese on the top. Drizzle some butter over and put in a very hot oven till bubbling. Take out sprinkle some saute of mushrooms and place some hot asparagus tips on top.
Sprinkle with paprika and serve happy eating.


D'la Soupe D'angulle
Jersey Conger Soupe
Recipe: Anthony Fry.
INGREDIENTS:

1 and 1/2lb Conger,
3 Pt's water,
1 heart of cabbage chopped,
2 leeks,
petals of a marigold or two,
1 quart of milk,
1 oz of jersey butter,

METHOD:

Fresh Conger boil in 3pts of water approx one and half hours strain and keep the liquid, remove fish from the bone.
Return to the pot with the chopped cabbage and leeks, bring to the boil over slow heat.
Add parsley seasoning to taste add quart of milk and 1oz of jersey Butter.
To serve sprinkle with marigold petals.
Finally serve with fresh Jersey cabbage loaf and churned Jersey butter.

1939 D'la Soupe De Congre.
During The Occupation Of Jersey By The Germans.

Recipe:
1 lb of conger,( on the head )
1 lb tomatoes, ( skinned )
1 onion,( chopped )
8 oz peas,
1 small cabbage, ( chopped )
2 pts of milk,
salt and fresh milled pepper,
1 bouquet garni,
marigold petals,
1 oz of jersey butter,

METHOD:

Wash the conger head well in plenty of water.
Place in a pan cover with cold water and boil for one and a half hours.( A pressure cooker is useful for this.)
Drain and reserve the liquid.
Take fish of the bone and add with the prepared vegetables the herbs also the fish to one and a half pints of the fish stock season to taste and simmer gently for 20 minutes.
Take out the bouquet garni, then ladle 3 large cupfuls of fish into a sieve or liquidizer.
Reduce this amount to a puree then return to the pan.
This thickens the soup and there is no need to add flour.
Add milk, butter, and bring to the boil very slow and simmer.
Serve very hot.
Serves four people.
Serve with the Marigold petals on the top.
Best with Jersey cabbage loaf and fresh churned Jersey Butter.

Anthony Fry:
Chicken Curry & Savoury Rice
Ingredients:
portions for 1 person, add for each person ingredients,
Hot curry add to taste, chillies not more than six
Chicken 1 Breast Diced for each person.
Ginger 1oz. fine slcd
Sultanas 1oz.
Chillies 2 small. fine sliced
Garlic 3 cloves crushed
Mixed Herbs pinch
Coriander 1/2 oz chopped
Eating Apple 1 diced
Pineapple 1/2 sml diced
Banana 1 sliced
Red / or Green Pepper 1/2 diced
Turnip 2oz diced
Swede 2oz diced
Pumpkin 2oz diced
Lime 1/2 squeeze
Lemon 1/4 squeeze
Mushroom 1lge sliced
Spring onions 2 sliced
Onion 1 diced
Carrot 1 sliced
Curry Powder 1tbl spns
Tomato Puree good squeeze, Worcester sce 3 shakes,
Salt, Pepper, Vinegar 3 shakes, Olive Oil 1 tblspoon,
Butter 2oz, Plain Flour 2tbl spns, Des Coconut 1tbl spn.
1/2 mug rice per person, add Water or stock 2 & half mugs per person in separate pot.
With, star of Annis 1 per person, cloves 2 per person, cardamon 4 per person, salt pinch, turmeric pinch,
Method:
Put in pot, Onion, Carrot, Garlic, Chicken, Mushroom, Swede, Pumpkin, Turnip, Curry Powder,
Chillies, Ginger, Pepper Green Or Red, Coriander, Mixed Herbs, Butter, Olive Oil, Spring Onions,
Sweat all this off till translucent, Add Flour roux up start to add stock / water slowly stirring
in as you go till all liquid is in,
then put rest of ingredients in, Apple, Pineapple, Banana, Sultanas, Lime, Lemon, Tomato Puree,
Worcester sce, Salt, Pepper, Vinegar, Coconut,
Should be of the consistency of tomato soup for thickness,
bring to boil then let simmer for one hour stirring often.
Rice:
Put measured water on to boil for rice with all ingredients that you have handy
if no bits and pieces just the salt is ok. When Boiling, put rice in boil for ten minutes turn down very low
with lid on leave ten more minutes and it should be ready, dry-ish, turn off, take most of the bits off the top of
rice, and serve with condiments of your choice,or, Mango Chutney, Banana, Desiccated Coconut, Peaches, Sultanas, Fried Shrimps, Salsa, etc! Enjoy.

That special Valentine dinner for two.
For Your chosen Prince or Princess.

First put in a blender,
A piece of ginger,
4 Halves of fresh apricot + Half a banana
A tablespoon of sage and onion stuffing,
A teaspoon of demara sugar,
A Teaspoon of strawberry jam,
add water slowly to mix blend to
consistency of stiff stuffing.
Get two chicken supremes.
Cut an incision along one side of each,
Then Stuff the chicken with
a portion of the stuffing mix to fill,
Get four rashers of back bacon &
wrap around the two breasts two on each.
put your roast potatoes in also.
Place in roasting dish & cook for 45 mins
on 200c or 6 in electric oven.
Prepare your veg Broccoli, Carrots & peas,
In one pot add a pinch of sugar & salt.
bring to boil turn down to low &
Cook till 'al Dente' about 7 mins.
Or you can have rice.
Make some gravy for pouring over,
Adding a tablespoon of Apricot Jam.
